In January we started working with our fabulous new caterer, Blue Strawberry. Their chefs have come into the kitchens at No.4 Hamilton Place and created some of the best dishes the venue team has ever seen – and, of course, eaten. To thank them for their efforts so far and to show all of our clients yet to sample their dishes what they can expect, we wanted to showcase some of our personal favourites.
These baked chicken skins topped with potato and truffle puree with caviar and sorrel bites have everything a canapé needs. The crunch of the skin, the smooth sweetness of the puree and the subtle, salty kick of the caviar are an amazing combination. (They also look the part, too.)
One of the things many clients have told us, is how much they appreciate the effort our chefs put into creating delicious and imaginative vegetarian and vegan dishes. This main dish of pot roast Jerusalem artichokes with smoked buttermilk and parsley sauce is a perfect example. The dish’s vibrant colours are matched by its bold, deep flavours – this plate never fails to get actual gasps when we serve it.
Although our Blue Strawberry chefs like to offer organisers a varied selection of healthy dishes, they also like to give guests at No.4 the chance to indulge. This candied strawberry whipped cheesecake with toasted rice and buttermilk caramel is testament to that.
London is a diverse and multi-cultural city and guests at events in the capital are used to being spoilt with tastes from around the world – No.4 is no exception. Blue Strawberry chefs can turn their hands to a wide variety of cuisines as this Tandoori Butternut Squash, Roast Sage and Cumin Butter with Goats Curd and Poppadom Crumble shows.
A huge part of enjoying food is about the experience as a whole, not just the flavours and textures of the ‘eating’ part of the process. This seared steak tartare with pine nut emulsion, black pepper croutes and charred gherkins has an element of drama in its presentation that will impress even the most seasoned of event goers.
